Chocolate, chocolate doesn’t ask questions. It understands. I know this might sound crazy to you, but I actually have a normal relationship with this stuff. ‘No way!’ you might think. But it’s true. I don’t crave it as often, and when I eat some, I only eat a piece or two. This may partly be because I am a lover of savoury stuff. Do not put a bowl of potato crisps near me, I guarantee you that I will empty it! And the bag! Maybe it’s partly because I shifted my chocolate preferences years ago from milk to dark. And when you eat a piece of the dark chocolate, your craving for sweets is basically gone. Great, isn’t it?
The Good in Chocolate
So while eating your daily/weekly/monthly dose of this great stuff, you don’t even necessarily have a bad conscience. Research shows that the consumption of dark chocolate even has a beneficial impact on your health. Remember, I am talking about the dark version, not the sugary crap. The dark one with a high cocoa content is very nutritious, that means high on fiber, Manganese, Copper, Magnesium, Iron etc. It even has the good fats! Then there’s the fact that it contains a wide variety of powerful antioxidants, even way more than most other foods. It may lower your blood pressure, lower the risk of heart diseases and in fact be great for your skin. Man, I should eat more of this! What we do have to remember, however, is that it comes with calories. Bummer.
So today I wanted to be a bit more creative with my sweets. Let’s start:
- 2 bars of dark chocolate (at least 70% of cocoa)
- 1 bar of chocolate with 90% of cocoa
- 1 bar of white chocolate
- 1 bag of tropical trail mix
- Aluminum foil
Start by chopping and melting the dark, very dark and white chocolate in separate containers. You can even use your microwave for this step! Stir it occasionally until you have a smooth paste.
In the meantime, prepare a baking tray with one or two large sheets of aluminum foil. Spread your trail mix on a wooden board and chop everything roughly with a knife.
Now it’s time to mix everything together! Pour the dark chocolate onto the baking tray, make sure it spreads out nicely. Now add the darker and the white one and distribute it all over the brown mass. With a spoon, create swirls.
Last step: Spread the tropical trail mix on top of everything. Then let the mixture cool. Break the bark into uneven pieces or cut it up nicely. Your choice!
So, that does look good, I have to admit that. I really like the combination of the bitterness of the dark chocolate, the sweetness of the white and the fruitiness of the dried mangoes. Also, the nuts are wonderful, and don’t forget about the coconut flakes. This is pure heaven! Try for yourself!
