Hey guys! Today I want to extend your breakfast table to a deliciously nutty chocolate spread which is so easy to make! Usually I prefer a savoury Sunday breakfast, but sometimes the sweet-tooth in me gets the better of me. Guess you know that feeling, right? So, I frequently grab Nutella to satisfy my needs, or I take my mother’s self-made jam.
However, the thing with Nutella is that it contains a great amount of palm oil. Heck, I don’t even know if Nutella is such a big thing outside of Europe! Anyway, palm oil plantations are responsible for the clearing of huge parts of the rainforest. And this affects climate (as you all well know) and threatens the existence of many animal species. But enough of my moral rambling, let’s get back to this thing here.
- 100 g cane sugar
- 120 g margarine
- 100 g dark chocolate (at least 50% of cocoa)
- 50 g milk chocolate
- 100 g almond puree
- 30 ml water
- 60 g ground almonds
- 2 pinches of salt
Start by preparing a bain-marie (what a fancy French word that is) with a pot full of water and a bowl. Next, add the water and the sugar and warm them up. Add the chocolate and melt it on the lowest temperature, it cannot become hotter than 40°C.
Now, when the chocolate is almost melted, take the bowl out of the bain-marie and immediately mix in the margarine. Then add the almond puree and whisk up the mixture by help of an electric mixer. Afterwards, stir in the ground almonds and the salt.
Fill the mousse into jars and store it in the fridge. Take it out of the fridge about 20 minutes before eating. That’s it!
Although it’s not a real alternative to Nutella (for a start, it’s with almonds and not hazelnuts) I really like the chocolate flavour and the nutty aftertaste. Plus, I really like the idea of trying to replace store-bought products with self-made ones. In my opinion you can always taste the love that went into making it.
