The lemon loaf always reminds me of summer. I mean, lemons are a summer staple, and who would think otherwise? Just think of sipping an ice-cold limoncello, drinking lemonade or eating lemon ice cream. Although technically you could drink and eat this in the winter months, it just doesn’t feel right. And whenever I think of lemons, I think of the Amalfi Coast and Italy and summer and sun. So, eating this lemon loaf just really puts me in vacation mood, and I hope it has the same effect on you!
This loaf is rather easy to prepare, it’s super moist thanks to the mascarpone (Italy!) and absolutely fruity. And while we’re speaking about Italy, have you tried my Mediterranean Herb Cookies yet?
The Recipe for the Lemon Loaf
- 200g of flour
- 1 tsp of baking powder
- 1 lemon
- 125g of soft butter
- 200g of sugar
- 2 eggs
- 150g of mascarpone
- 150g powdered sugar
- Chopped pistachios
- Start by mixing the flour with the baking powder. Then, wash the lemon in hot water, dry it and grate its zest. Next, press out the juice. In a next step, beat the butter and the sugar with the whisk of your mixer until it’s creamy. Now add the eggs one at a time, then the mascarpone, flour-mixture, lemon zest and juice. Beat until you have a smooth mixture.
- In the meantime, preheat your oven to 150°C. After that, grease a loaf pan and sprinkle it with flour, then add the dough. Bake it for about 60 minutes.
- While the cake is baking, prepare the icing. For this, mix the powdered sugar with 3 tablespoons of water and mix until smooth. When the cake’s done, let it cool for about 10 minutes in its pan, then carefully remove it from the pan. Spread the icing on the cake and sprinkle it with chopped pistachios. That’s it!
The lemon loaf is actually one of my favourite ‘easy’ cakes. You know, one that you can do in a few minutes and don’t have to spend hours preparing. Usually, we used a cake mix for the lemon loaf when I was a kid. However, sometimes you want to try the real thing. I mean, the cake mix was delicious, but as I have written before, I usually want to know exactly what’s inside my food. So this lemon loaf is wonderfully juicy and full of lemon flavour. And I’m super proud of my icing this time! Not like last time with the drop cakes… What do you think?
