Smoked salmon guys! Who doesn’t love smoked salmon on a piece of freshly baked bread, garnished with some eggs and dill? Or, my favourite breakfast: Eggs benedict with rich sauce hollandaise and smoked salmon! Move over bacon, lox has taken your place! Honestly, salmon has always been pure luxury for me, and of course that has something to do with its price. But, it’s often my one and only treat besides seafood and no one is taking that away from me!
Actually I am a huge lover of fish and seafood and would almost always pick a seafood alternative over a steak. Now, imagine me eating in France, that was pure heaven for me (and one of the reasons I’m going back this year). Oysters, mussels, shrimps, squid…I love it all! Sadly my boyfriend doesn’t like seafood (and smoked salmon for that matter) a bit, that means I cannot cook it at home. So actually seafood IS a pure luxury and something special for me, because I don’t get to eat it very often. But, I can still help myself with some smoked salmon sometimes, and I think this spread is a wonderful tribute to it!
- 150g of smoked salmon
- 1 onion (I used a red one)
- 200g of cream cheese
- 50g of crème fraiche
- 3 tsp. of horseradish
- Lemon Juice
My mouth is watering when I think of this! Start by finely chopping your onion, and try not to cry. But it’s okay if you do! Then in a tall vessel, mix the smoked salmon, cream cheese, crème fraiche, chopped onion and horseradish.
Now purée everything with a hand-held blender until you have your desired consistency. I left a few small pieces of salmon in there. In a next step, season with pepper, dill and lemon juice. Go easy on the salt, or leave it out altogether, because the smoked salmon is salty enough. That’s it!
I am soooo loving this spread! It’s downright refreshing and awesomely tasty, especially on a piece of freshly baked bread. And you can play around with the amounts of horseradish and lemon juice to adjust it to your taste. I think this is a wonderful addition to any cheese and cutlery board, and also a nice companion to my Mediterranean hummus and Tapenade!
